Homemade Pumpkin Soup!

As the weather gets colder, soup is the one thing I have to make me feel better.
Today I made pumpkin soup.

I got the recipe of my mum, would made it when I was ill, and it brought me make to life, so here it is...

Pumpkin Soup, Serves 4


What you will need:

  • Half a pumpkin
  • Vegetable oil
  • Half a onion
  • 2-3 heaved teaspoons of curry paste
  • 1 chicken OXO cube
  • Pinch of salt and pepper
  • Litre boiled water
Also
  • A large saucepan
  • A Blender




To Do...



First.. Take your pumpkin and slice it into cubes, then cut the outside layer off.
it is easier to do it like this then the other way around, as the pumpkins are hard to cut.
Slice the onion into little bits and put to one side






Then.. Get a large saucepan, fill with about 1/2 cup of oil, once the oil gets hot add the curry paste and stir. when its dissolved a little, add the onion, keep stirring
















Once.. The onion is browning, add the pumpkin into the pan, and mix in the onion and curry paste. Boil about a litre of water, add half and stir the pumpkin in, then pour in the rest, also added the chicken OXO cube with a pinch of salt and pepper, place the lid on saucepan and leave to simmer on a low heat for about 20 mins.














After.. It has been left to simmer, making sure that the pumpkin is soft, scoop it out and place in a jug (it make less of a mess to do it this way) 
Pour it into the blender, select a low speed to start of with, adding the liquid to the consistency you like it. 






























Finally.. Pour it into a serving bowl, have with some crusty bread to top it all off. You can store it into some tupperware bowls and store in fridge, Enjoy!!
